Homemade Fresh Pasta

Here is a recipe for homemade fresh pasta, very simple to make but it does require some time. You will need a pasta machine, but it can also be done without one: you will need to roll out the dough very thinly with a rolling pin and then cut the tagliatelle with a knife. It takes a while, but it's worth it!

Instructions

  • 1.   Step 1:
  • 2.   In a bowl or the bowl of a stand mixer, pour the flour and mix it with the eggs, olive oil, and salt. Add a little water if needed to form a dough ball. Cover with plastic wrap and let it rest at room temperature for 30 minutes.
  • 3.   Step 2:
  • 4.   Divide the dough into 4 equal balls. Flour the balls and flatten them slightly. Pass each flattened piece of dough through the pasta machine twice on the widest setting, number 1 for me. Fold the dough in half and pass it through the machine 2 more times.
  • 5.   Step 3:
  • 6.   Then, change the setting to the next narrower one (setting 2) and pass the dough through it 3 times without folding. If the dough becomes too long, cut it in half and continue. Repeat this process until the dough is thin enough (I passed it through up to setting 7, but you can stop at setting 5 or 6 as very thin dough may tear).
  • 7.   Step 4:
  • 8.   Let the rolled out dough dry for 30 minutes on a broomstick placed between 2 chairs and covered with a clean towel, or on a drying rack. Then, pass the dough through the cutting attachment of the pasta machine. I chose tagliatelle, but you can also make spaghetti, etc...
  • 9.   Step 5:
  • 10.   For cooking, bring a large pot of salted water to a boil and cook the pasta for a few moments (about 3 to 5 minutes; + or - depending on the thickness). Serve hot with the sauce of your choice.
