Easy Rolled Cake

Instructions

  • 1.   Preheat the oven to 210°C (410°F) (thermostat 7)
  • 2.   To prepare the sponge cake:
    Separate the egg whites and yolks.
    In a bowl, mix the egg yolks with the sugar until the mixture becomes pale.
    Gradually add the flour while continuing to mix.
  • 3.   Optional: Melt 30g (2 tablespoons) of butter (/100g (1 cup) of flour) and add it.
  • 4.   Beat the egg whites until stiff peaks form and gently fold them into the previous mixture.
  • 5.   Spread the batter onto a baking sheet lined with parchment paper and bake for 10 minutes at 210°C (410°F).
  • 6.   Once out of the oven, roll the sponge cake with a damp towel and let it cool for a few moments.
    Unroll, spread the jam and sprinkle with chopped (or blended) fruits, then roll the cake again.

Notes & Suggestions

  • Vary the filling with chocolate spread, chestnut cream, honey, fresh fruits, mascarpone, etc...
