Leek Tart

Winter tart, perfect served with a green salad. Keeps for 2 days in the fridge after baking.

Instructions

  • 1.   Preheat the oven to 195°C (383°F).
  • 2.   Clean the leek (cut it in half and rinse it under water).
    You can use the green leaves or just the white part (according to your preferences).
    For the green leaves, finely chop them with herb scissors, for example. For the white part, slice it into rounds.
  • 3.   Melt the sliced leek in a saucepan over low heat (about ten minutes).
  • 4.   Place the pastry in a tart dish and prick it with a fork. Spread mustard on the bottom of the pastry.
  • 5.   Slice the onion and mushrooms.
  • 6.   Add the mushrooms, leek, and onion to the tart.
  • 7.   Make a custard (whisk together beaten egg with spices + milk).
  • 8.   Pour the custard over the tart, bake in the oven for 45 minutes (start checking at 30 minutes).
    Let it cool and enjoy ;)

  • 30 cl of milk
  • 1 tablespoon of mustard
