Instructions

  • 1.   Wash and cut the endives into quarters lengthwise.
    Arrange them in a cross shape on each plate.
  • 2.   In a bowl, mix 2 tablespoons of vinegar with 3/4 of the blue cheese, mashed with a fork. Add 2 tablespoons of oil, then 1 teaspoon of curry.
  • 3.   Pour this sauce between the endives and sprinkle with the remaining blue cheese, mashed with a fork.

Notes & Suggestions

  • You can sprinkle with walnuts.
