Small puff pastry squares with goat cheese and leeks
You can replace the leeks with two endives seasoned with cream and the goat cheese with Roquefort cheese.

Instructions
1. Preheat the oven to 210 °C (425 °F).
2. Clean and finely slice the leek whites, then sauté them gently in butter. Season with salt and pepper. Add 2 tablespoons of water and continue cooking covered for about 15 to 20 minutes, stirring regularly, until they are very tender. Let cool.
3. Roll out the puff pastry and cut out 4 squares of about 10 cm (4 inches) on each side (or leave it whole).
4. Place the pastry on a baking sheet. Spread the cooled leeks over the pastry.
5. Sprinkle with crumbled fresh goat cheese and slide it into the center of the oven.
6. Bake for about 20 minutes, until the pastry is puffed and golden. Serve immediately.
