Small puff pastry squares with goat cheese and leeks

You can replace the leeks with two endives seasoned with cream and the goat cheese with Roquefort cheese.

Instructions

  • 1.   Preheat the oven to 210 °C (425 °F).
  • 2.   Clean and finely slice the leek whites, then sauté them gently in butter. Season with salt and pepper. Add 2 tablespoons of water and continue cooking covered for about 15 to 20 minutes, stirring regularly, until they are very tender. Let cool.
  • 3.   Roll out the puff pastry and cut out 4 squares of about 10 cm (4 inches) on each side (or leave it whole).
  • 4.   Place the pastry on a baking sheet. Spread the cooled leeks over the pastry.
  • 5.   Sprinkle with crumbled fresh goat cheese and slide it into the center of the oven.
  • 6.   Bake for about 20 minutes, until the pastry is puffed and golden. Serve immediately.
