1. Preheat the oven to 200°C (400°F).
2. Unroll the puff pastry. Using a medium-sized glass, cut out circles of pastry.
3. Grease a sheet of aluminum foil. Place half of the pastry circles on it, making sure to separate them well.
4. Cut slices of goat cheese about 5 mm thick. Then place one on each pastry circle.
5. Sprinkle with Herbes de Provence. Spread 1/2 teaspoon of honey on each goat cheese.
6. With the remaining pastry circles, cover the cheeses and pinch the edges to seal them well. Brush the top of each puff pastry with egg yolk, then bake for 15 minutes.
