Soufganioth or Hanukkah donuts

Soufganiya: A soufganiya is a flattened spherical donut that is first fried, then pierced and filled with jam, marmalade, dulce de leche, pastry cream, chocolate, before being dusted with powdered sugar. It can be enjoyed hot or cold.

Instructions

  • 1.   You can use 1 cube of fresh yeast or 2 tablespoons of instant yeast.
    Mix all the ingredients to obtain an elastic dough (if using fresh yeast, dissolve it in a little warm water, if using instant yeast, mix it directly with the flour).
  • 2.   Cover the dough and let it rise in a warm place for 1 hour or more, it should double in size.
  • 3.   Place the dough on a floured work surface and roll it out to a thickness of about 2 cm. Cut out circles with a diameter of 5 cm using a glass or a cookie cutter. Sprinkle with flour and cover with a cloth. Let it rest for about 20 minutes until the dough circles have risen.
  • 4.   Heat frying oil to 180°C. Fry the donuts for 3 to 4 minutes on each side, in batches. Do not fry too many at once, otherwise the oil temperature will drop and the donuts will absorb too much oil. Remove with a slotted spoon and drain on paper towels.
  • 5.   Fill a small piping bag with marmalade or other filling. When the donuts have cooled slightly, make a small lateral incision in each donut. Insert the nozzle into the donut and fill with about 1 teaspoon of marmalade. Put powdered sugar in a shallow dish. Roll each donut in the sugar.

Notes & Suggestions

    1 jar of strawberry jam or dulce de leche, pastry cream, chocolate, etc...

  • 500 g of flour
  • 3 eggs
  • ¼ teaspoon of salt
  • 1 glass of warm water
  • 2 tablespoon of oil
  • 1 fresh baker's yeast
  • 3 tablespoon of sugar
  • Pour la déco: :
  • 1 liter of frying oil
  • 1 powdered sugar
  • 1 marmalade
