Two-step Dauphinois gratin

On this basic recipe for Dauphinois gratin, add diced ham, chicken strips, or fish to turn it into a complete dish.

Instructions

  • 1.   Preheat the oven to 200°C (400°F).
  • 2.   Peel and wash the potatoes, then dry them.
  • 3.   Cut them into slices about 2 mm thick.
  • 4.   Simmer the milk and cream in a saucepan.
  • 5.   Season with salt, pepper, and grated nutmeg.
  • 6.   Pour the sliced potatoes into the saucepan and cook for 10 minutes on a simmer.
  • 7.   Peel and remove the germ from the garlic clove, then rub the bottom and sides of a large gratin dish with it.
  • 8.   Layer the potatoes and their cooking juice in the dish.
  • 9.   Sprinkle the dish with grated cheese and scatter butter flakes on top.
  • 10.   Bake for 40 minutes, checking for browning.
    If the gratin browns too quickly, cover it with buttered aluminum foil.
    Serve hot.

Notes & Suggestions

  • Lighter version: purists make it without cheese. It's up to personal taste!
