Brussels Waffles

Recipe for about a dozen waffles.

Instructions

  • 1.   In a bowl, mix the sifted flour, 4 egg yolks, a pinch of salt, and sugar.
  • 2.   Boil the milk with a quarter of a vanilla bean cut in half lengthwise, remove the vanilla bean once the milk has boiled.
  • 3.   Gradually mix the flour/egg mixture with the milk (be careful, hot milk tends to cook the egg yolks), and add the melted butter.
  • 4.   Beat the egg whites until stiff peaks form, then fold them into the initial mixture.
  • 5.   Cook the waffles for about 2 to 3 minutes in a waffle iron.

  • 125 g of wheat flour
  • 4 eggs
  • 1 pinch of salt
  • 1 teaspoon of powdered sugar
  • 250 ml of semi-skimmed milk
  • 100 g of butter
  • ½ vanilla beans
