Brussels Waffles
Recipe for about a dozen waffles.

Instructions

. In a bowl, mix the sifted flour, 4 egg yolks, a pinch of salt, and sugar.

. Boil the milk with a quarter of a vanilla bean cut in half lengthwise, remove the vanilla bean once the milk has boiled.

. Gradually mix the flour/egg mixture with the milk (be careful, hot milk tends to cook the egg yolks), and add the melted butter.

. Beat the egg whites until stiff peaks form, then fold them into the initial mixture.

. Cook the waffles for about 2 to 3 minutes in a waffle iron.
