Tiramisu

Tiramisu (from Italian "lift me up", "cheer me up", "give me strength") is a traditional Italian dessert that no one ever wants to share.

Instructions

  • 1.   Whisk the egg yolks vigorously with the sugar until the mixture becomes pale and frothy. Then add the mascarpone and mix until the result is well blended.
  • 2.   Beat the egg whites until stiff peaks form, adding a pinch of salt, then mix them into the mascarpone cream. Be careful, to keep the mixture light and fluffy, the egg whites should not be "broken". Gently fold in from top to bottom using a silicone spatula, turning your bowl a quarter turn each time.
  • 3.   Prepare black coffee, preferably espresso diluted with water (so that it is not too strong and has the required amount of liquid). Add the Amaretto, an Italian almond liqueur that will incredibly flavor your dessert, then mix. Quickly dip the biscuits in the coffee before lining the bottom of the dish with them. Use the ends to fill in any gaps in the center of your tiramisu. Pour the remaining black coffee over it.
  • 4.   Spread the mascarpone cream and sprinkle it with cocoa powder.
  • 5.   Chill for at least 3 hours.

Notes & Suggestions

  • You can replace Amaretto with rum.

    So simple and quick yet appetizing. I had some leftover mascarpone and coffee from the morning, and voila, it's ready and chilled in 8 minutes. I prefer serving them in beautiful transparent cups as it's easier to serve.
