Omelette with potatoes and parsley

Simple and effective, potato and parsley omelette is the perfect express meal for a weekday evening. And it is not the Spanish, followers of the tortilla, who will say the opposite. 5 min of preparation top chrono, a small green salad well seasoned as a bonus, and you have a balanced main course, healthy, which reigns everyone! Perfect ! Follow this nice recipe, and keep it in your folder "quick and super good"! ;)

  • 1.   Peel the potatoes and cut them into slices. Wash them, drain them and dry them in a cloth.
  • 2.   Heat 4 tbsp. oil in a pan. When hot, sauté the potatoes over high heat for 5 minutes, then lower the heat. Add salt and pepper. Cover and cook for 10 minutes, stirring occasionally.
  • 3.   Meanwhile, break the eggs in a salad bowl and whip them with a whisk. Add salt and pepper. Wash, dry, thin and chop the parsley. Add it in the beaten eggs.
  • 4.   When the potatoes are cooked, pour the eggs over them. Cook for 4 minutes shaking the pan in fits and starts. Then turn the omelette over with a large lid and continue cooking 1 min. Slide the omelette into a dish and serve immediately with a well seasoned green salad.
