Potato and Parsley Omelette

Simple and efficient, the potato and parsley omelette is the perfect quick meal for a weeknight. And the Spanish, who are fans of the tortilla, would agree. 5 minutes of preparation, a well-seasoned green salad on the side, and you have a balanced, healthy main dish that everyone will enjoy! Instructions

  • 1.   Peel the potatoes and cut them into slices. Wash them, drain them, and dry them with a towel.
  • 2.   Heat 4 tablespoons of oil in a frying pan. When it is hot, add the potatoes and sauté them over high heat for 5 minutes, then reduce the heat. Season with salt and pepper. Cover and cook for 10 minutes, stirring occasionally.
  • 3.   Meanwhile, crack the eggs into a bowl and whisk them vigorously with a whisk. Season with salt and pepper. Wash, dry, and chop the parsley leaves. Add them to the beaten eggs.
  • 4.   When the potatoes are cooked, pour the eggs over them. Let cook for 4 minutes, shaking the pan occasionally. Then flip the omelette using a large lid and continue cooking for 1 minute. Slide the omelette onto a plate and serve immediately with a well-seasoned green salad.

  • 3 sprig of parsley
  • 1 teaspoon of oil
  • 1 pinch of salt and pepper
