Vegetable Pizza Waffles

Attention, this is a killer recipe! 😋 If you love pizza and waffles, you will adore these vegetable pizza waffles! Made with vegetables, this is a completely healthy meal that you can share with your baby, indulging in every bite. We recommend this recipe from 12 months onwards, adjusting according to your baby's abilities, as the waffles are crispy on the outside and soft on the inside. And if your child sometimes refuses zucchini... try it in this form: it's a great way to introduce it differently. Let me know how it goes!

Instructions

  • 1.   Wash and peel the zucchini, then finely grate it.
  • 2.   Mix 2 eggs with 200g of flour + 1 tbsp of olive oil + 100g of tomato puree + the grated zucchini.
  • 3.   Cut the mozzarella into small pieces (or grate it), and chop some olives. Add them to the batter.
  • 4.   Add a few pinches of oregano, to your taste, and mix.
  • 5.   Place spoonfuls of this batter into a hot waffle iron, and cook the waffles for 4-5 minutes.
  • 6.   Let them cool on a rack to keep them crispy!

Notes & Suggestions

  • Quick tip: make the waffles small enough so they don't cover the entire surface of the waffle iron, as the cheese might melt and spill over... making it harder to clean if it overflows.
    Storage: 2 days in the refrigerator, can be frozen (3 months).
    Recipe makes about 10 waffles.
    Serving size for 1 meal:
    Under 1 year: 1 to 2 waffles with a serving of vegetables.
    12 months and older: 3 to 4 waffles with a serving of vegetables.
