Instructions

  • 1.   Finely slice the zucchini using a mandoline, then drizzle with olive oil, lemon juice, and a pinch of sea salt. Mix and arrange them in a rosette on a very large platter.
  • 2.   Thinly slice the tomatoes and place them on top. Drizzle with a little olive oil, salt, and balsamic vinegar.
  • 3.   Grill slices of halloumi and place them on the carpaccio. Finally, add thin slices of figs, a drizzle of olive oil, and only salt the figs.
  • 4.   Sprinkle with thinly sliced green onions (or basil) and enjoy.
