Zucchini Orzo

A perfect dish for a summer evening. The crispy breadcrumb topping adds a beautiful crunch to the creamy orzo.

Instructions

  • 1.   Start by heating a large skillet over medium heat and add the oil and diced onion. Cook for about 5 minutes until the onion begins to soften.
  • 2.   Then add the garlic and zucchini and cook for a few more minutes.
  • 3.   Next, add the miso paste, orzo, and vegetable broth and mix everything together before letting it simmer.
  • 4.   Stir every 5 minutes and once most of the liquid has been absorbed and the orzo is cooked, add a generous pinch of salt, lemon juice, butter, and peas. Mix well.
    Let it cook for another 5 minutes and meanwhile, prepare the breadcrumb topping.
  • 5.   Now add to the ninja foodi base bowl and combine with olive oil, Italian seasoning, soy sauce, and salt.
  • 6.   Once everything is combined, use the air crisp function at 200°C for 6 minutes until everything is crispy.
  • 7.   Plate your orzo and serve it with a generous layer of crispy breadcrumb topping.

Notes & Suggestions

  • Store-bought breadcrumbs or bread slices blended in the ninja into breadcrumbs.

  • 3 zucchinis
  • 900 ml of vegetable broth
  • 1 tablespoon of olive oil
  • ½ white onions
  • 3 garlic cloves
  • 1 teaspoon of miso
  • 300 g of risoni pasta (orzo, bird's tongue)
  • ½ lemon juice
  • 120 g of fresh basil
  • 1 tablespoon of butter
  • Garniture de chapelure :
  • 1 tablespoon of breadcrumbs
  • 2 slices of bread with toppings
  • 1 tablespoon of soy sauce
  • 1 teaspoon of Italian spice blend
