Spring pizza with cauliflower, spinach, and peas

Cauliflower pizza crust with egg and mozzarella, topped with peas, radishes, fresh goat cheese, spinach sprouts, and green pesto.

Instructions

  • 1.   Process the cauliflower in a food processor using the finest grater to obtain a semolina. Pat the cauliflower semolina dry with paper towels and transfer it to a bowl. Crack the egg into the bowl, add the flour, grated mozzarella, and Italian seasoning. Mix well.
  • 2.   Place a sheet of parchment paper on a baking sheet, brush with oil, and spread the mixture on top. Shape into an oval about 0.5 cm thick and brush the top with oil.
  • 3.   Select the AIR FRY mode at 180°C and cook for 15 minutes, checking occasionally. The top should be nicely golden.
  • 4.   Place the peas in a bowl. Heat water in a kettle and pour it over the peas.
  • 5.   Wash the radishes, trim the tops of the leaves, keep some stems, and cut the radishes into sixths with the stems. Slice the fresh goat cheese into flakes or thin slices and place them on the cauliflower pizza. Add the spinach sprouts, peas, radishes, a drizzle of olive oil, salt, and pepper. Drizzle with green pesto to enhance the dish.
  • 6.   Enjoy immediately.

Notes & Suggestions

  • Variation: Replace the fresh goat cheese with ricotta or cottage cheese.
  • Tip: Use a 14 cm diameter tart pan for a round pizza.
