Buckwheat financier

Instructions

  • 1.   Preheat the oven to 200°C (392°F). Grease and flour a metal financier mold (not necessary if using a silicone mold).
    Melt the butter in a small saucepan and cook it until it turns a nutty brown color. Remove from heat and let it cool.
  • 2.   In a mixing bowl, combine the egg whites, sugar, honey, and glucose. Mix well without whisking. Add the buckwheat flour and almond powder and mix until smooth.
    Chill in the refrigerator for an hour.
    Pour the batter into the molds and bake for 15 to 20 minutes in the oven. The financier should not be overcooked; it should still be slightly "shiny" in the center.
    Unmold and enjoy.
