White Bean Curry

Instructions

  • 1.   In a Dutch oven, sauté the minced onion and the halved garlic clove in a drizzle of olive oil.

    Add the spices, mix well, and let cook for 1 minute.

    Add the diced squash, broth, and water.
  • 2.   Stir in the white beans, add the heavy cream, mix, and let cook for an additional 10 minutes.

    Serve the curry hot, don't forget to sprinkle with parsley and cashews if you have any.

  • 250 g of canned white beans (drained weight)
  • 1 onion
  • 1 garlic clove
  • ½ teaspoon of paprika
  • ½ teaspoon of turmeric powder
  • 1 teaspoon of curry powder
  • 1 bouillon cube
  • 25 cl of water
  • 25 cl of heavy cream
  • salt (according to taste)
  • pepper (according to taste)
