Leek and Bell Pepper Sauté

Instructions

  • 1.   Cut the leeks into small pieces and sauté them in a pan.

    If you like them crunchy, continue cooking while monitoring regularly and turning them occasionally.

    If you prefer them tender, add half a glass of water and let them cook covered for 30 minutes.
  • 2.   Then add the grilled bell peppers and 3 tbsp of balsamic vinegar and continue cooking for 10 minutes, the last few minutes uncovered to allow the water to evaporate completely (if you haven't grilled your bell peppers, add them at the same time as the leeks but peel them for better digestion).

    Just before serving, add chopped parsley and Parmesan cheese.

  • 6 tablespoon of grated parmesan (optional)
  • parsley (according to taste)
