Instructions

  • 1.   I don't peel any vegetables, except for the tomatoes.
  • 2.   Wash and separately cut all the vegetables into large cubes.
  • 3.   First, sauté the eggplants in olive oil until they take on color. Then add the zucchinis, 5 minutes later the bell peppers, tomatoes, onion.
  • 4.   Season with salt, pepper, add the sprig of thyme. Let simmer for 15 to 20 minutes.
  • 5.   The secret: In a bowl, soak the bread in milk. When it is well soaked, squeeze it and discard the excess milk. Add crushed garlic and parsley. Add this stuffing to the ratatouille 5 minutes before the end of cooking.
