Instructions

  • 1.   Cook the pasta according to the package instructions. Drain and let it cool.
  • 2.   Heat a skillet or barbecue. Grill the bell pepper, zucchini, and onion with a drizzle of olive oil until tender and lightly browned.
  • 3.   In a salad bowl, mix the cooked pasta, grilled vegetables, cherry tomatoes, mozzarella, and corn.
  • 4.   Season with olive oil, salt, pepper, paprika, and Herbes de Provence. Gently toss to coat all the ingredients.
  • 5.   Refrigerate the salad for at least an hour before serving to allow the flavors to blend.
