Potato, Tomato, Carrot, and Mozzarella Gratin

Instructions

  • 1.   Preheat the oven to 220°C (425°F).

    Wash and peel the potatoes and carrots, then cook them in the microwave for 10 minutes at full power.
  • 2.   Peel the onion and slice it thinly.

    Line the bottom of a gratin dish with half of the onion slices.

    Set aside the rest.

    Slice the mozzarella, tomatoes, and cooked potatoes into rounds.
  • 3.   Arrange the tomatoes, potatoes, and carrots in the dish, alternating them.

    Once the dish is full, add the remaining onions.

    Drizzle with olive oil.
  • 4.   Cover everything with the mozzarella slices.

    Bake for about 20 minutes.

    Serve immediately.
