Instructions

  • 1.   In a dish lined with parchment paper, place the spinach leaves, the already roasted butternut squash ⚠️, the red onion, and the mushrooms.
  • 2.   Drizzle with a little olive oil, salt, and garlic powder. Crack the eggs on top and cover with feta and parmesan cheese (also sun-dried tomatoes if desired).
  • 3.   Bake for 18 to 20 minutes at 180°C. Sprinkle with pomegranate seeds and finely chopped green onion when removing from the oven.

  • 2 mushrooms
  • ½ red onions
  • 40 g of feta
  • 20 g of grated parmesan
  • 1 handful of pomegranate
  • 1 tablespoon of olive oil
  • 1 tablespoon of garlic powder
  • 3 dried tomatoes
  • salt (according to taste)
