Instructions

  • 1.   Heat the oil in a Dutch oven or a non-stick skillet.
  • 2.   Add the garlic and pre-cooked spinach uncovered over high heat.
  • 3.   Crack the eggs into a bowl, season and lightly beat with a fork.
  • 4.   Add the eggs towards the end of cooking, gently mix and remove from heat when the eggs are done.
  • 5.   Serve hot or warm.
