Instructions

  • 1.   Wash and slice the mushrooms. Slice the red onion and finely chop the garlic.
  • 2.   In a hot skillet, add the olive oil. Sauté the mushrooms, onion, and garlic for 5-7 minutes until everything is golden brown.
  • 3.   Make 2 wells in the skillet and crack an egg into each one. Cover the skillet and let cook for 3-4 minutes.
  • 4.   Season with salt, pepper, and sprinkle with parsley.
