Pan-fried parsnips and potatoes with curry

Instructions

  • 1.   Peel the parsnips and potatoes.

    Cut all the vegetables into small pieces for quicker cooking.
  • 2.   Heat your skillet or wok over medium heat with the butter and oil.

    Add the parsnips, onions, garlic, and potatoes to the skillet and cook covered for 20 minutes, stirring occasionally and checking the potatoes for doneness.
  • 3.   Pour in the heavy cream, curry, and reduce the heat slightly.
  • 4.   Continue cooking for 5 minutes and serve hot.
