Instructions

  • 1.   Wash the tomatoes and cut them into quarters.
  • 2.   Finely slice the onions.
  • 3.   Crack the eggs into a bowl, lightly salt, and beat them with a fork.
  • 4.   Heat the oil in a skillet over medium heat.
  • 5.   Pour in the eggs and scramble them gently until just set, then set them aside.
  • 6.   In the same skillet, add the tomatoes and let them soften for 3 to 4 minutes.
  • 7.   Stir in the sugar and soy sauce, then mix.
  • 8.   Return the eggs to the skillet and gently mix to coat them well with the sauce.
  • 9.   Season with pepper and sprinkle with onions before serving.
