Spring rolls

This recipe was not planned at all... Last time, we stopped by Mr. Popotte's uncle and aunt. His aunt, who is Vietnamese, was about to prepare some spring rolls, and I couldn't resist getting involved. What was supposed to be a little outing turned into a spring roll cooking workshop 😍 The spring roll, or "rouleau de printemps" in French, is a culinary specialty from Vietnam, consumed as an appetizer or starter. They are healthy, delicious, and fresh. You can vary the fillings, but most of the time, it consists of a rice paper wrapper filled with lettuce, rice vermicelli, raw vegetables (carrot, cucumber, bean sprouts), fresh herbs (mint or coriander), shredded chicken or pork, and cooked shrimp. The most challenging part of the recipe is the folding. Instructions

  • 1.   Cook the rice vermicelli for 5 minutes in boiling salted water. Drain them, rinse with cold water, and set aside in a colander.
  • 2.   Cut the shrimp in half lengthwise. Slice the meat into thin strips.
  • 3.   Wash, dry, and finely chop the sucrine lettuce. Rinse and pick the mint leaves.
  • 4.   Pour hot water into a pie dish. Moisten the first rice paper wrapper and drain it on a cloth.
  • 5.   Place a lettuce leaf on top, then add 2-3 mint leaves, followed by some soybean sprouts.
  • 6.   Finish with the rice vermicelli.
  • 7.   Arrange pieces of pork in front of this preparation, and in front of the pork, place the shrimp (skin side against the rice paper).
  • 8.   Roll tightly, then fold the sides towards the center. Roll the wrapper up tightly. Repeat with the remaining wrappers.
  • 9.   Serve with a spring roll dipping sauce or a peanut sauce.
