Herb and Mozzarella Omelette

Instructions

  • 1.   In a bowl, whisk the 3 eggs and mix in the Herbes de Provence.
  • 2.   Season with salt and pepper.
  • 3.   Cut the mozzarella ball into small cubes. Heat a non-stick pan and pour in the mixture.
  • 4.   Sprinkle with mozzarella cubes before cooking begins.

    Cook over low heat, occasionally bringing the edges towards the center with a fork (or spatula), until a crispy crust forms underneath.
  • 5.   Enjoy hot with a green salad or something else.
