Tomato and Celery Branches

Instructions

  • 1.   Heat water in a microwave-safe container and immerse the tomatoes, having previously scored each one on the back.

    Plunge them into cold water, remove the skin with a kitchen knife, then dice them.

    Thoroughly rinse the celery stalks under cold water and cut off their base.
  • 2.   Pull off the branches and cut them into sections.
  • 3.   Set aside.

    Place the butter in a pan and melt over low heat.

    Peel the garlic and onions, then slice them into strips and place them in the pan to brown.

    Add the tomato cubes and stir with a wooden spoon.
  • 4.   Season with salt, pepper, and thyme and let simmer for 15 minutes over low heat.

    Stir with a wooden spoon, incorporate the celery, and continue cooking for 15 minutes.

    Adjust the seasoning if necessary and serve in plates as a side dish to a meat dish that you can top with a sauce.
