Whiting fillets with basil coulis

Instructions

  • 1.   Chop the basil after washing and draining it. Peel and chop the shallot. In a saucepan, reduce the white wine with the shallot until dry. Add the heavy cream. Let it boil for 4 minutes over high heat. Reduce to low heat. Stir in 70 g of butter cut into pieces. Whisk. Season with salt and pepper. Add the basil. Keep warm.
  • 2.   Brown the whiting fillets for 2 minutes on each side in the remaining butter. Serve the fish on a plate. Coat it with the coulis. Serve immediately with steamed potatoes and lemon wedges.
  • 3.   Basil is rich in vitamins A and C. The latter notably facilitates the absorption of iron.

  • 100 g of butter
  • 1 shallot
  • 15 cl of sour cream
  • 15 cl of dry white wine
  • 2 stalk of basil
  • 8 floury potatoes
  • salt (according to taste)
  • pepper (according to taste)
