Sautéed Potatoes

Instructions

  • 1.   Peel the potatoes and cut them into fairly large and regular pieces.
  • 2.   Rinse the potato pieces under water to remove the starch.
  • 3.   Place the still wet pieces in a dry towel and rub them.

    Heat the oil in a thick-bottomed pan, add the coarse salt, then the potatoes.
  • 4.   Cook over high heat, turning them regularly for 20 minutes.

    They should brown nicely. Reduce the heat and cook for another 10 minutes.

    Add the finely chopped shallot and cook for another 5 minutes.
  • 5.   Add the cold butter (this will make them crispy) and cook for another 15 minutes, stirring them.

    Check for doneness and serve immediately.

  • 4 tablespoon of sunflower oil
  • 1 shallot
