Caramelized beet sauté (Poitevin beets)

Instructions

  • 1.   Peel if necessary, then cut your beets into slices about 0.5cm thick.

    Peel and slice the onions.
  • 2.   Melt the butter in a large skillet, then arrange the onions and beets.

    Sauté for about 5 minutes.
  • 3.   Sprinkle with flour and let cook for another 2-3 minutes.
  • 4.   Add the sugar, salt, pepper, a glass of water, then bring to a boil.
  • 5.   Cover, reduce to medium heat, and let cook for about 20 minutes, until the beets are very tender.
  • 6.   Tips:

    - Side dish: For vegetarians, this goes very well with green or blonde lentils. Otherwise, prefer a meat accompaniment.
