1. Take the cheese out of the fridge at least 10 minutes before starting.
2. Cut the rind off the cheese and form balls.
3. Roll each ball in flour, then in beaten and salted egg, and finally in breadcrumbs.
4. Pass each ball through the egg and breadcrumbs again to seal well.
5. Chill the croquettes for 1 hour.
6. Fry the balls in hot oil for 1 to 2 minutes.
7. Place on paper towels, sprinkle with spices, and enjoy immediately.
