Carrot Omelette

Instructions

  • 1.   Wash, peel, and slice the carrots into rounds.
  • 2.   In a microwave-safe dish or a glass dish, arrange the carrots. Add water, a pinch of salt, and pepper. Mix well.
  • 3.   Cover the container or place pierced plastic wrap over it.
    Bake for 13 minutes on the "cooking or reheating" setting. If you are not using a microwave, cook for 20 minutes in salted boiling water. Drain in both cases.
  • 4.   To peel, cut off the stem and root, cut in half lengthwise, peel, being careful with your eyes. Cut in the center to have a stable base and slice thinly.
  • 5.   Cook the shallots in oil until golden. Add the carrots, mix, and cook for a few moments.
  • 6.   Crack the eggs into a plate to check their freshness, then pour them into a bowl with salt and pepper. Beat vigorously.
  • 7.   Pour the mixture into a preheated pan, adding a little chosen fat if needed. Cook over medium heat, gently shaking the pan by the handle. Once the omelette reaches the desired level of doneness, lower the heat to let it brown slightly. Flip and fold the omelette, cook to your liking, and serve immediately.
