1. Peel the potatoes, rinse under cold water, cut into large cubes.
Cut the beet into cubes.
Place in the blender.
2. In the blender, add the milk, blend until smooth.
In a large saucepan, add cold water.
3. Place the potatoes in the cold water, bring to a boil, cook for about 15 minutes,
check for doneness by inserting a knife blade.
4. Drain the potatoes. In a large saucepan, melt the butter over very low heat.
Mash the potatoes with a potato masher.

6. You can reheat it in the microwave, serve with a garnish of your choice.
