Instructions

  • 1.   Peel the mango and the pineapple. Cut the mango into small cubes of about 1 centimeter on each side.

    Cut the pineapple into quarters, remove the central part that is not digestible. Cut the flesh into triangular shapes.

    Preparation of caramelized pineapple
    In a skillet, heat the sugar. After 4 to 5 minutes, it starts to melt and color. This is the time to lower the heat.

    Let the sugar color and turn brown, caramel color. Then add the pineapple slices and brown them for 2 minutes on each side before removing them from the skillet. Repeat the process if necessary, depending on the size of your skillet.

    Plating
    Place a meringue in the center of a round plate. Put whipped cream in the hollow of the meringue, overflowing slightly. Arrange three to four slices of caramelized pineapple and some pieces of mango.

    Add two or three red currants and a pinch of dried flowers. Repeat the process for the other plates.
