Instructions

  • 1.   Wash and finely slice the leeks.
  • 2.   Sauté gently in olive oil for 10 minutes until they are soft.
  • 3.   Beat the eggs with the cream, mustard, herbs, salt, pepper, and a pinch of nutmeg.
  • 4.   Add the sautéed leeks to the mixture and pour everything into a gratin dish.
  • 5.   Crumble or slice the goat cheese on top.
  • 6.   Bake at 180°C for 25 to 30 minutes until the gratin is golden brown.
  • 7.   Serve hot with a green salad or a low glycemic index side dish.

  • 60 g of unripened fresh goat cheese
  • 1 tablespoon of olive oil
  • 1 teaspoon of mustard (optional)
