Leek and Split Pea Dahl

Instructions

  • 1.   Remove the roots from the leeks and the first leaves if they are damaged. Wash them carefully and slice them.
    Peel the onion and chop it finely.
  • 2.   Sauté the onions and spices in oil (or clarified butter) for a few minutes, then add the leeks and let everything simmer for 15 minutes.
  • 3.   Then add the split peas, cover generously with water, add the bay leaf and clove, and bring to a boil.
    Let it simmer for about 1 hour: the split peas should be very tender.
  • 4.   Off the heat, add the cream, mix well, and sprinkle with fresh coriander before serving.

  • 250 g of leek
  • 1 onion
  • 2 tablespoon of oil
  • ¼ teaspoon of turmeric powder
  • 1 pinch of Espelette pepper
  • 1 teaspoon of grated fresh ginger
  • 200 g of split pea
  • 2 bay leaves
  • 1 clove
  • 10 cl of sour cream
  • 1 tablespoon of fresh coriander
