Parsnip and Apple Soup

Instructions

  • 1.   Peel and cut the parsnips and apple into large cubes.
  • 2.   Melt the butter in a saucepan, add the pieces of apple and parsnip.
    Let cook for 5 to 10 minutes.
  • 3.   Add the broth, cover and let simmer over low heat for 20 minutes, or until the parsnip pieces are cooked.
  • 4.   Remove from heat and let cool for a few minutes.
  • 5.   Add the milk, small "precipitates" may form but it's normal.
  • 6.   Blend the mixture until smooth.
  • 7.   Season with salt and pepper to taste, gently heat again for 5 minutes then serve.

  • 1 liter of vegetable broth
  • 60 cl of milk
  • salt (according to taste)
  • pepper (according to taste)
