Zucchini fritters in the Airfryer

Instructions

  • 1.   Wash and grate the zucchinis into medium-sized julienne strips. Place the grated zucchinis in a colander, add a little coarse salt and mix. Let them drain for about 15 minutes before squeezing to extract as much water as possible (without pressing too hard).
  • 2.   Preheat your airfryer to 180°C. Finely slice the red onion and chop the fresh basil. In a large bowl, mix the flour, eggs, onion, basil, grated cheese, and add the zucchinis. Season lightly (with a little salt).
  • 3.   Work the mixture to obtain a homogeneous, slightly sticky dough, but not too much. Shape small patties and place them one by one in the pre-oiled airfryer basket, avoiding overlapping them.
  • 4.   Cook at 180°C for 15 minutes, gently stirring halfway through cooking. Serve the fritters while still hot.

  • 1 coarse salt
