Instructions

  • 1.   Beat the eggs and season. Add the potatoes and onions.
  • 2.   Mix well. Heat 3 tablespoons of olive oil in a non-stick pan. Add the egg, potato, and onion mixture.
  • 3.   Gently stir.
  • 4.   Cook over medium heat.

    Serve by drizzling with a little olive oil.
