Instructions

  • 1.   Slice the onion and garlic very thinly.
  • 2.   Pour a little oil and a knob of butter into a skillet. Add the onion and garlic and sauté for a few minutes.
  • 3.   Deglaze with white wine and wait for the alcohol to evaporate. Then add 1 large glass of water and continue cooking for 10 minutes (over medium-high heat) while stirring frequently.
  • 4.   Meanwhile, cook the pasta in a large amount of salted water.
  • 5.   When the onion is cooked, put the onion mixture in a food processor and blend until creamy. Then pour it back into the skillet and add the heavy cream and pepper. *You can also use an immersion blender.
  • 6.   Continue cooking until the cream thickens, then add the chopped parsley and stir.
  • 7.   Drain the al dente pasta, pour it into the skillet with the onion sauce, and mix quickly.
  • 8.   Serve and add black pepper. The onion pasta is ready!
