Brownie cookies

Instructions

  • 1.   Preheat the oven to 160°C (320°F).
  • 2.   In a large bowl, mix the egg, melted butter, vanilla, and sugar.
  • 3.   In another bowl, combine almond flour, baking soda, salt, and cocoa powder.
  • 4.   Add macadamia nuts and chocolate chips. Mix well.
  • 5.   Chill the cookie dough in the fridge for about 30 minutes.
  • 6.   Line a baking sheet with parchment paper.
    Using a spoon, form balls of similar sizes.
  • 7.   Then, using your hands, roll into uniform balls. If the dough is sticky, rinse your hands under cold water.
    Place the balls on the baking sheet and flatten with your fingers. Top with nuts and/or chocolate chips.
  • 8.   Bake in the oven for 10-12 minutes.
    Let cool and enjoy.

Notes & Suggestions

  • Use high-quality cocoa powder for a rich flavor.
    Chill the cookie dough for 30 minutes. This will make the cookies easier to handle and help them keep their shape when you are ready to bake them.
    Do not overbake the cookies. Use a toothpick to check for doneness. The cookies will continue to cook once removed from the oven.
    Let them rest for a few minutes before serving.
