Fresh goat cheese and cherry tomato brick tart

Instructions

  • 1.   Preheat the oven to 180°C (356°F) with the fan on.
    Place the 3 sheets of brick pastry on top of each other and place them in a 24cm (9.5 inch) mold, spray the surface of the brick pastry with a little olive oil (using an oil spray is very convenient to avoid using too much).
    Bake for about 10 minutes to brown the bottom of the brick pastry tart. Let it cool afterwards.
    Meanwhile, mix the cottage cheese with the fresh goat cheese, add some finely chopped basil leaves, salt, and pepper to taste. Keep it in the fridge if the tart is not going to be eaten right away.
    Before serving (to prevent the pastry from getting soggy), spread the cheese mixture on the bottom of the tart and add the cherry tomatoes cut in half.
    Enjoy with a nice salad or as an appetizer.
