Rice with peas and coconut milk

Instructions

  • 1.   Peel, wash the onion under running water, slice thinly.

    In the blender bowl, add the grated coconut.
  • 2.   In the blender bowl, add the milk, mix for 2 minutes.

    Strain into a large saucepan, press to remove excess coconut milk.
  • 3.   Bring the coconut milk to a boil, then pour the rice into the saucepan.

    As soon as the rice has absorbed all the coconut milk, add salt and sugar, mix.
  • 4.   Shell the peas, set aside.

    In the saucepan, pour the water, salt, bring to a boil.
  • 5.   Once boiling, pour the peas into the saucepan.

    Cook for 10 to 15 minutes, taste a pea to check for doneness.

    Drain.
  • 6.   In the pan, add the oil, the onions.

    Brown the mixture, then stop cooking.
  • 7.   Mix the rice, peas, and the contents of the pan, taste and adjust the seasoning.

    Sprinkle with parsley and serve immediately with meat or fish.
