Vanilla Crème Brûlée

A classic and delicious recipe to use up your egg yolks and prepare a creamy vanilla crème brûlée.

Instructions

  • 1.   Preheat your oven to 150°C (300°F).
  • 2.   In a saucepan, heat the heavy cream with the split and scraped vanilla bean.
  • 3.   In a bowl, whisk the egg yolks with the sugar until you get a smooth mixture.
  • 4.   Pour the hot cream over the egg yolk-sugar mixture while stirring.
  • 5.   Remove the vanilla bean and pour the mixture into ramekins.
  • 6.   Place the ramekins in a baking dish filled with hot water.
  • 7.   Bake in a water bath for about 40 minutes, until the cream is set.
  • 8.   Let cool, then refrigerate for at least 2 hours.
  • 9.   Before serving, sprinkle the creams with sugar and caramelize them using a kitchen torch.
