Vanilla Crème Brûlée
A classic and delicious recipe to use up your egg yolks and prepare a creamy vanilla crème brûlée.

. Preheat your oven to 150°C (300°F).

. In a saucepan, heat the heavy cream with the split and scraped vanilla bean.

. In a bowl, whisk the egg yolks with the sugar until you get a smooth mixture.

. Pour the hot cream over the egg yolk-sugar mixture while stirring.

. Remove the vanilla bean and pour the mixture into ramekins.

. Place the ramekins in a baking dish filled with hot water.

. Bake in a water bath for about 40 minutes, until the cream is set.

. Let cool, then refrigerate for at least 2 hours.

. Before serving, sprinkle the creams with sugar and caramelize them using a kitchen torch.
