Spinach and ricotta pasta

Instructions

  • 1.   Bring a large pot of salted water to a boil and cook the pasta according to the package instructions.
  • 2.   Meanwhile, peel and finely chop the garlic cloves.
  • 3.   Heat the olive oil in a large skillet over medium heat, then add the garlic and sauté for 1 minute.
  • 4.   Add the fresh spinach and cook for a few minutes until wilted.
  • 5.   Stir in the ricotta and mix well to obtain a creamy sauce. Add the heavy cream.
  • 6.   Drain the pasta, reserving some cooking water.
  • 7.   Add the pasta to the skillet with the sauce and gently mix. Add the grated Parmesan, a pinch of nutmeg, salt, and pepper. Mix and adjust the consistency with a little cooking water if necessary.
  • 8.   Serve the spinach and ricotta pasta.

  • 200 g of fresh spinach
  • 200 g of ricotta (optional)
  • 50 g of grated parmesan
  • 50 ml of heavy cream
  • 2 garlic cloves
  • 2 tablespoon of olive oil
  • 1 pinch of ground nutmeg
  • salt (according to taste)
  • pepper (according to taste)
