Instructions

  • 1.   Prepare the crepe batter by mixing flour, vanilla sugar, salt, and eggs in a bowl.
  • 2.   Gradually add milk and melted butter while whisking.
  • 3.   Let the batter rest in the fridge for 1 hour. Then cook your crepes.
  • 4.   For the pastry cream: in a bowl, break the eggs and mix them with sugar. Add sifted flour.
  • 5.   In a saucepan, heat the milk with split and scraped vanilla pods.
  • 6.   As soon as it boils, remove the milk from the heat, remove the vanilla pods, and pour the milk over the previous mixture while whisking vigorously.
  • 7.   Put everything back in the saucepan and heat over high heat, stirring constantly until the mixture thickens.
  • 8.   Line a mold the size of your crepes with plastic wrap, allowing it to hang over the sides to be able to close it once the cake is finished.
  • 9.   Place a crepe on the bottom, cover with a thin layer of still warm pastry cream, and repeat the process until all the ingredients are used, finishing with a crepe on top.
  • 10.   Fold the plastic wrap over and lightly press.
  • 11.   Chill for at least 3 hours or prepare it the day before.

  • 50 g of flour
  • 2 vanilla beans
