Leek and Feta Quiche

A guaranteed success, with a preparation time and simplicity bordering on culinary insult, in short, a quiche just as we like them.

Instructions

  • 1.   Preheat your oven to 180°C (350°F). Place the puff pastry in a pie dish (ours is 31 cm in diameter) and prick it with a fork. Pre-bake it for 5 minutes at 180°C (350°F).
  • 2.   Remove the green parts of the leeks, cut them in half lengthwise, then into 3 cm pieces.

  • 3.   Place them in a colander and rinse thoroughly to remove any dirt residues. Drain.
  • 4.   In a hot pan, add a knob of butter (or olive oil) and sauté the leeks for about 5 minutes until they are lightly golden. Set aside.
  • 5.   In a bowl, add the eggs, milk, and cream, season with salt and pepper, whisk until you get a smooth texture. Set aside.
  • 6.   Once the pastry is pre-baked, remove it from the oven. Spread the mustard on the pastry, then add the cooked leeks and crumble the feta on top.
  • 7.   Pour the mixture into the pie dish. Bake for 45 minutes. It's ready!
